Spicy Chicken and Spring Greens Salad

This salad has a kick.  It's like having fresh chicken wings without all the guilt.

Spicy Chicken and Spring Greens Salad

Ingredients:

For the Chicken:

2 ea - Boneless Chicken Breast

2 tsp - Paprika

2 tsp - Garlic Powder

1 tsp - Onion Powder

1 tsp - Salt

1 tsp - Thyme

1 tsp - Cayenne Pepper

1 tsp - Pepper

For the Salad :

1 package  - fresh mixed spring greens or spinach mix

1 Apple or Pear - sliced in cubes

1/4 cup - raw Almonds  - chopped

1/4 cup - Feta or Parmesean Cheese

2 tbsp -  raw Sunflower or Pumpkin Seeds 

2 tbsp - dried Cranberries

For the Salad Dressing:

2-3 Tbsp - Dijon Mustard

2-3 Tbsp - Maple Syrup (or Honey)

(Optional) 1 tsp - Maritime Madness Mustard Pickle Hot Sauce

Pepper to taste

 

Directions:

Chicken:

1.  Heat a greased Grill to 425 degress F.  

2. Mix all spices together in a bowl

3. Rub spice mixture generously on chicken breasts

4.  When grill is ready, add chicken and cook until juices run clear (around 12-14 minutes)

Salad:

1.  While chicken is cooking,  mix Spring Greens, Cheese, Apple/Pear, Almonds, Seeds, and Cranberries in a large bowl

 Dressing:

1.  Mix the Dijon Mustard, Maple Syrup, (Optional) hot sauce, and pepper in a bowl until mixed.  If too runny add more Dijon,

Put together:

1.  Once chicken is thoroughly cooked, cut into 1" chunks

2.  mix Chicken in with Salad. 

3. Add dressing and mix well.

You can make a kid friendly version on this salad, by omitting the Cayenne pepper.  The flavour will be there without the heat.
